UHT ( ULTRA HIGH TEMPERATURE ) MILK

Ultra High Temperature processing of milk is used to kill off any spores. This process sterilizes milk so that it can have a shelf life unrefrigerated for periods of 6 to 9 months, until opened.  Milk is heated to above 135 degrees Celsius for around 2 seconds.

UHT milk is very popular in places where refrigeration is not available. In Africa it is widely used because of it's long shelf life and in many areas dairy farms are not actively productive.
